Our Matcha Rice Crispy Treats were a café favorite, and while they’re no longer on the menu, we wanted to share the recipe so you can make them at home. Crispy, chewy, and full of matcha, they’re easy to make whenever you’re craving a little something sweet.
Ingredients
- 3⅓ cups crispy rice cereal (we like Real Cereal Co.)
- 5 tablespoons coconut butter
- 6 tablespoons + 1 teaspoon agave syrup
- ½ teaspoon Maldon sea salt, lightly crushed
- A small pinch of vanilla powder, about ⅛ teaspoon
- 3 teaspoons Hikari matcha
Recipe
- Line a 9 x 5-inch loaf pan with parchment paper.
- Gently warm the coconut butter in a small saucepan over low heat until melted.
- Stir in the agave, salt, and vanilla powder.
- Sift in the Hikari matcha.
- Remove from the heat. Add the crispy rice cereal and fold quickly and evenly while the mixture is still warm.
- Transfer to the prepared pan. Place another piece of parchment on top and press down firmly into an even layer.
- Refrigerate for 20–30 minutes, or until firm.
- Lift from the pan, trim the edges if desired, and cut into 3 large pieces or 6 smaller treats.
